How To Make Au Gratin Potatoes In The Air Fryer

You’ll start off by making a simple roux with the butter and flour to create the creamy cheese sauce for the au gratin potatoes. Don’t get intimidated by this process, it’s actually quite simple.

MAKE A ROUX Start by melting the butter in a skillet over medium heat. Once it’s melted whisk in the all purpose flour until it’s evenly incorporated and cook about 1 minute. Gradually pour in the milk, while continuing to whisk the mixture, until it’s all incorporated and smooth.

ADD CHEESE Stir in the garlic and green onions and cook until fragrant, about 1 minute, then add in the cheese, salt and pepper. Stir until combined and smooth again.

Which Air Fryer Is Best?

I get this question a lot whenever I post a new air fryer recipe. I personally like the Gourmia 7 quart Air Fryer.

You can usually find it at Costco for a good deal, but it’s also available on Amazon too.

For this particular recipe we’re using the basket style air fryer, which is what I prefer as opposed to the toaster oven style. I believe this recipe would work fine in either style.

Air Fryer Safe Containers

In order to be able to cook these potatoes in the air fryer, the cups used need to be air fryer safe.

You could use either glass or ceramic or even silicone containers in the air fryer. Please do not use plastic in the air fryer, as this will melt and cause a mess.

I found these fantastic 1 cup Pyrex glass containers that come with a lid for easy storage. They work perfectly for this recipe.

Make Ahead Au Gratin Potatoes

The best part about this recipe is that you can easily prepare these potatoes, pop a lid on them before cooking and place them in the fridge for up to 4 days!

In order to cook, just remove the lid, place it in your air fryer and cook!

This makes it great for small batch cooking, or when you want to eat some cheesy potatoes but don’t want to prepare a whole casserole!

What's the difference between scalloped potatoes and au gratin potatoes? ›

The difference comes down to cheese. Scalloped potato recipes are usually baked in a basic cream sauce until soft and tender, with no cheese topping. Potatoes au gratin are a bit more decadent. They are made with lots of cheese sprinkled in between the layers of potatoes and also on top of the casserole.

What happens if you don t soak potatoes before air frying? ›

I wouldn't bother doing potatoes from the raw state, without soaking. It will take about a half an hour and the texture won't be nearly as rewarding. They just don't get very crispy without that cold soak.

What happens if you don t rinse potatoes before putting in to air fryer? ›

Soaking potatoes in cold water can help release some of their starch and yield a crispy fry. That being said, I find it is not necessary when using the air fryer as the air gets hot enough to get them crispy. I have never soaked my potatoes and we get crispy fries all the time. If you want to try it, feel free to.

Why are potatoes soggy in airfryer? ›

Once you've washed your spuds you need to dry them thoroughly. If you don't then excess moisture can seep into your potato while it's being cooked and result in a soggy skin.

Why are my au gratin potatoes watery? ›

Some potatoes, like Yukon Gold, have more water in them. Try letting the dish rest for 10 minutes or so to let the water get absorbed and let the sauce thicken. Try cooking your recipe longer. Try uncovering the dish in the oven for the last 10 minutes or so.

Why do my au gratin potatoes curdle? ›

The curdling is caused by high heat, which is hard to avoid in an oven.

Are potatoes better in oven or air fryer? ›

Crisper skin: The skin of the air fryer baked potato became considerably crispier. I also noticed that the skin stayed crisp longer than the oven-baked potato. Fluffier interior: The interior of the air fryer baked potato was fluffier and lighter.

Can you put aluminum foil in an air fryer? ›

Foil is safe to use in an air fryer so long as you follow three basic rules: never let foil touch the heating element; make sure the foil is weighted so it doesn't blow around the basket; and avoid contact with acidic ingredients, which can cause the foil to leach onto your food.

Can you put a raw potato in the air fryer? ›

You do not need to peel them, just wash and dry them. Add potatoes to a mixing bowl and toss with olive oil. Once fully coated, add spices and lemon juice. Place potatoes in an air fryer liner or in the basket of your air fryer (this may need to be done in batches).

What to serve with potato au gratin? ›

Au Gratin potatoes are rich. Serve them with leaner proteins such as beef tenderloin, grilled or roasted chicken, and pan-seared fish. Another excellent pairing for Au Gratin potatoes is a fresh salad with herbs and a tart vinaigrette. Au Gratin potatoes make a great casserole and are a great entrée themselves.

What does au gratin mean in French? ›

The phrase au gratin literally means "by grating" in French, or "with a crust," from the verb gratter, "to scrape, scratch, or grate."

What makes a gratin a gratin? ›

A “gratin” is any dish that is topped with cheese or breadcrumbs mixed with butter, then heated in the oven or under the broiler until brown and crispy, according to The Food Lover's Companion. The term au gratin or gratinée just refers to anything prepared in that manner.

How long do potatoes take to get soft? ›

Boiled Potatoes Time Guide

Peeled, cubed potatoes cut into small, one-inch pieces should cook in 10 to 12 minutes, once the water reaches a boil. Larger pieces (about 2 inches across) may need longer, around 15 minutes. Medium whole potatoes should boil 20 minutes before they'll be tender.

Why are my potatoes not crispy in the air fryer? ›

Arrange the potato pieces in a single layer to allow proper air circulation, promoting even cooking and crispiness. While the air fryer uses less oil than deep frying, using a bit of oil is still essential for achieving crispy results. Toss the potatoes in a small amount of olive oil or vegetable oil before air frying.

How do you make potatoes soft fast? ›

Wash the potato, puncture with a fork in 2-3 places, then microwave on high for about 4 minutes. Rinse it again so it's wet. Sprinkle on salt and pepper if desired. Finish baking in oven for 10 to 15 minutes.
