I’m a sucker for banana bread. I seriously can sit and eat an entire pan of it, but I don’t do that. Instead, I go and cut a tiny slice, eat it, and then repeat that about 20 more times. It’s a weakness for me for sure. This healthier banana bread with yogurt is no exception!

If you have been here a while, you know that I’m a lover of Clean Simple Eats. I love to exercise and try to balance all of my sweets out with balanced meals and snacks. When I bought their treat book, I knew I would be disappointed because they were “healthy” treats. For me, if you’re really wanting something sweet, I say eat it. I tend to not be satisfied with the ‘wannabe’ sweets. However, I was pleasantly surprised! A lot of the recipes are so good that you would never guess they didn’t have granulated sugar or brown sugar in them.

One of my favorites is their banana bread squares. I cannot stay out of them! They are that good. I was whipping up a batch of them before heading to a wedding the other day. Side note: Does anyone else eat before going to a wedding reception? I never know if there is going to be real food, or if it just going to be dessert. It’s always a dilemma I have because I hate going to a reception and only having sweets to eat. I’ve learned that eating a healthier/heartier snack before hand helps out either way!

Anyways, I was out of a few ingredients, so I had to substitute a few things, and it was seriously the best it’s ever been. One of the changes I made was adding greek yogurt instead of applesauce. Making the banana bread with yogurt makes the bread so much heartier and rich. The texture becomes incredible soft and moist, yet dense all at the same time. I’m pretty sure my husband and I devoured half the pan before we loaded up the car with the kids and the wedding cake I was delivering.

Another unique thing about this banana bread recipe is that it is made with Kodiak Cakes pancake mix. I love that it is so versatile and adds a significant amount of protein to the recipe, making it even better for you. I enjoy having a lot of chocolate chips in my banana bread, but if you don’t, leave it out. It will still taste amazing.

Prep Time 5 minutes mins

Cook Time 50 minutes mins

Ingredients

  • 4 ripe bananas
  • 2 eggs
  • 1 cup plain greek yogurt
  • cup vegetable oil
  • 1 cup honey
  • 2 tsp vanilla
  • 2 tsp baking soda
  • ½ tsp salt
  • 1 tsp cinnamon
  • 3 cups Kodiak Cake power cake mix
  • 1 cup dark chocolate chips

Instructions

  • Preheat your over to 350 degrees.

  • Grease a deep 9×13 pan and set aside. Make sure to use your deepest pan (at least 3 inches) as it will spill out while baking otherwise. Don’t ask how I know, just believe me.

  • In the bowl of an electric mixer, place all of your ripened bananas. The riper the better. Mix them for about 1 minute until they are all smushed up. Add in your greek yogurt and mix those two ingredients together until creamy in look.

  • Next, add in your eggs, vanilla, honey, and oil. Combine until well incorporated, about 2 minutes. The batter will be thin and soupy looking.

  • Then add in all of your dry ingredients and mix 1-2 minutes. The batter will be thick.

  • Pour the batter into your greased pan, and then sprinkle your chocolate chips on top. I always sprinkle them on top as they will all wind up sinking to the bottom if they are stirred in. Sprinkling them on top will allow some to sink and some to stay on top while baking, making a more even distribution and more chocolate in every bite.

  • Bake in the oven for 37-42 minutes, or until the center is set. The top will be golden brown.

  • If you can’t find kodiak cake power cake mix then what could be used instead

    1. Kodiak cake pancake mix is pretty readily available at grocery stores where you find all of the other pancake mixes. If you can’t find it, I would suggest using a different banana bread recipe as the Kodiak mix has all the salt, baking soda, powder and such.

  • Also a tip abt the chocolate chips sinking, if you add just a small extremely light coat of flour it prevents sinking

    1. That is a great trick if you want to add a second step. Sprinkling them on top seems to work well too 😁.

I just made it this afternoon and had to come tell you how much we love this banana bread. I followed the recipe exactly and my 7 years old daughter gave it a 9/10 and my 4 year old gave it a 10/10. I’m in Canada and found the kodiak cake mix at Costco. Thank you for a great recipe!

    1. Hi Jawnell! I’m so glad you and your girls loved this. It’s also good to hear that Kodiak mix can be found in Canada.
