Grilled Cheese for Breakfast

Now that my youngest kids are starting to get older, they are starting to develop some pretty good menu ideas. My mind often gets stuck in a rut, so it’s nice when other people have suggestions!

The other day, one of the kids asked if it was possible to make a breakfast version of grilled cheese. Of course, it is, I answered! He helped gather all of the ingredients and assemble the sandwich.

While we made this with sausage, it would be equally as good with bacon or ham – or no added meat at all. I prefer scrambled eggs on my sandwich, but my daughter likes hers with an over-easy egg.

It just goes to show, no matter how you make them, they’re delicious! These sandwiches made a quick and easy breakfast on a Saturday (or any) morning.

How do you make the best grilled cheese

I know there are many arguments about which is better – butter or mayo – when making a grilled cheese. Personally, I think it comes down to personal preference because they’re both delicious!

However, I will note that mayonnaise does have a higher smoke point than butter. Meaning, you can cook your sandwich over slightly higher temperatures for a crispier and fluffier sandwich.

Can you make grilled cheese ahead

Personally, I think the best time to eat a grilled cheesy is right after it’s cooked. But if you need to make it ahead, I do have some tips for you.

Once cooked, it is important that you allow the sandwich to cool completely before packing it away. This helps prevent the sandwich from getting soggy.

Can you freeze Breakfast Grilled Cheese

Yes! Again, you will want to cook the sandwiches as directed in the recipe. Then, allow them to cool completely before placing them in freezer-safe zip-top bags or airtight freezer-safe containers.

How to reheat a Breakfast Grilled Cheese

Sure, you could microwave it, but that’s not really optimal for the crispy outside.

Personally, I like to microwave it partially just until it’s heated through and the cheese starts to get melty, then transfer the sandwich to a griddle or panini press to re-crisp the bread.

  • ground breakfast sausage – you can also use cooked and crumbled bacon, or ham.
  • large eggs – feel free to use liquid eggs or egg whites if you prefer.
  • Colby-Jack cheese– or any melty cheese.
  • soft butter – I prefer unsalted, but you can use salted. Or try this with mayo!
  • sourdough bread – or any sturdy bread.

How to make Breakfast Grilled Cheese

  1. Brown and crumble the sausage.

    In a large non-stick skillet, cook and crumble the ground breakfast sausage until no longer pink. Transfer the cooked sausage to a medium paper towel-lined mixing bowl and set aside. Wipe out the pan with a paper towel.

  2. Cook the eggs.

    In the same skillet, melt 2 tablespoons of butter over medium-high heat. Pour the eggs into the pan. Once the eggs begin to set, gently stir making scrambled eggs, until the liquid is almost gone. Remove the pan from the heat.

  3. Combine the sausage and eggs.

    Remove the paper towel from under the sausage leaving the sausage in the bowl. Add the scrambled eggs to the bowl with the sausage and gently stir to combine. Wipe the skillet with a paper towel and heat it over medium heat.

  4. Add buttered bread to skillet.

    Butter one side of each piece of bread. Place one slice of bread into the skillet, butter side down.

  5. Top with ingredients.

    Top the bread slice with one slice of Colby-Jack cheese. Scoop about 1/2-cup of the sausage-egg mixture over the top of the cheese. Top the sausage-egg mixture with another slice of cheese, then another slice of buttered bread with the butter side facing up.

  6. Brown both sides.

    Cook the bread until it begins to turn golden brown, about 3-4 minutes. Carefully flip the sandwich over and cook until golden brown on the second side

  7. Cut sandwich in half, if desired.

    Remove the sandwich to a cutting board and cut it in half, if desired.

  8. Repeat the process.

    Repeat the process with the remaining bread, cheese, and sausage-egg mixture.

  9. Serve.

    Serve immediately.

Recipe Tips

  • You can make these sandwiches with just eggs and cheese – or add your favorite cooked breakfast meat such as bacon, sausage, or ham.
  • If you prefer an over-easy, over-medium, or over-hard egg, you can do that instead of scrambled!
  • Try using mayo in place of the butter to brown the bread. It sounds crazy, but it is yummy!
  • Sometimes, I like to add a slice or two of fresh tomato with salt and pepper! So good!

  • 1/2 pound ground breakfast sausage
  • 6 large eggs, beaten
  • 8 slices Colby-Jack cheese
  • 4 tablespoons soft butter, divided
  • 8 slices sourdough bread

Instructions

  1. In a large non-stick skillet, cook and crumble the ground breakfast sausage until no longer pink. Transfer the cooked sausage to a medium paper towel-lined mixing bowl and set aside. Wipe out the pan with a paper towel.
  2. In the same skillet, melt 2 tablespoons of butter over medium-high heat. Pour the eggs into the pan. Once the eggs begin to set, gently stir making scrambled eggs, until the liquid is almost gone. Remove the pan from the heat.
