What is cloud bread?

Cloud bread is, as the name implies, light and fluffy bread baked into the texture of a cloud. Though if I can be technical, it’s really more of a soft baked meringue as there are no real “bread” ingredients used. This means it’s also incredibly low in carbs, gluten-free, and suitable for a keto diet.

Here’s why it’s one of my favorite bread recipes:

  • Have it how you like it. I give you the base recipe plus a handful of equally delicious flavor combinations so you can make it different every time.
  • Surprisingly versatile. For how delicate this bread is, it’s just as versatile as no yeast bread. Turn it into low-carb sandwiches, breakfast toast, or cloud pizza. The options are endless.
  • Diet-friendly. Like cottage cheese bread, if you’re looking for a low-carb, low-calorie bread recipe that’s nutrient-dense, this bread ticks all the boxes.

Ingredients needed

Just 4 albeit unique ingredients are all that’s required to make this cloud bread recipe. Here’s exactly what you’ll need:

  • Eggs. Use eggs at room temperature and separate the egg yolks from the egg whites.
  • Cream of tartar. Technically optional, though I highly suggest using it to help stabilize the eggs.
  • Salt. Just a dash to add flavor.
  • Mascarpone cream cheese. Softened and preferably full-fat. I’ve also tried this recipe with regular cream cheese, creme fraiche, and dairy-free cream cheese, and each works wonderfully.

How to make cloud bread

Step 1- Prep work. Preheat the oven to 285F/140C and line a baking pan with parchment paper.

Step 2- Separate the eggs. Separate the egg whites and yolks into separate bowls. Add cream of tartar and salt to the egg whites. Using a hand mixer or stand-mixer, whip the whites until stiff peaks form. To the egg yolks, add the mascarpone cheese and whisk to combine.

Step 3- Make the batter. Add the egg yolk mixture to the egg white mixture and use a silicone spatula to carefully fold the two together.

Step 4- Bake. Spoon the batter into 12 circular discs onto the prepared baking sheet. Bake for 25-30 minutes until golden. Let the bread cool on the baking sheet for 10 minutes, then transfer the bread to a wire cooling rack to cool completely.

Tips to make the best recipe

  • Use room temperature ingredients. I know I say this with every baking recipe, but I especially mean it with this one! The colder your ingredients are, the longer it will take to combine them, and the more air you’ll lose in the bread.
  • Fold, do not stir. When combining the egg whites and yolks, you’ll want to be careful not to overmix. Otherwise, you’ll end up with dense, flat bread.
  • Keep the eggs separate. Even the tiniest bit of yolk in the egg whites can prevent them from forming into stiff peaks– ask me how I know!
  • Add food coloring. The way I see it, we’re already testing the boundaries of bread, so we might as well go big or go home and add a few drops of your favorite food coloring.

Flavor variations

I really enjoy this keto cloud bread as is, but to make things interesting, here are some fun flavor combinations:

  • Cheese- Sprinkle 2-3 tablespoons of mozzarella or cheddar cheese on top of the cooked bread. Place back in the oven for a further 2-3 minutes.
  • Sesame- Sprinkle 1 tablespoon of sesame seeds over the mixture before baking.
  • Italian- Add dried Italian mixed herbs and garlic powder.
  • Everything- Fold through 1 tablespoon of everything but the bagel seasoning and ½ tablespoon on top of each portion of the bread.
  • Chocolate- Fold through ¼ cup of cocoa powder and 2 tablespoons of powdered sugar into the egg yolk mixture.
  • Ranch- Sprinkle 1 ½ teaspoons of ranch seasoning into the egg yolk mixture.

Storage instructions

To store: Leftover cloud bread can be stored in an airtight container in the refrigerator for up to 5 days.

To freeze: Place the bread in a freezer-safe container and freeze for up to 2 months. Let the frozen bread thaw overnight in the fridge before reheating.

To reheat: Reheat leftover bread in your toaster at the lowest setting or in the air fryer at 325F for 1-2 minutes.

Frequently asked questions

Is cloud bread good for you?

Cloud bread is high in protein and low in carbs and calories, making it a healthy addition to any diet, especially if you’re gluten-free or keto.

What does cloud bread taste like?

Plain cloud bread tastes a lot like egg, as this is the main ingredient. If you’re not a fan of the “egginess,” you can add salt, white sugar, or spices to change the flavor.

Why is my cloud bread not fluffy?

If your cloud bread is not fluffy, it’s likely because the egg whites didn’t form into stiff peaks or too much air was whipped out when the egg whites and yolks were combined.

FAQs

Why is my cloud bread not fluffy? ›

First, you might be over beating your egg whites, which prevents your cloud bread from having that fluffy texture. You'll know if you've overdone it if your egg whites look wet or grainy, she says. Spend With Pennies recommends beating the egg whites on high speed with a mixer just until they form stiff peaks.

Does Aldi sell cloud bread? ›

You have to be relatively familiar with the kitchen, as it requires baking with separated egg yolks and whites, cream cheese, and other ingredients. Luckily for those without the skills (or the time!) to bake cloud bread every time you want a sandwich, Aldi has its own version that comes pre-made!

Why did my cloud bread go flat? ›

Beat the egg whites longer than you think you need.

If the whites don't get “stiff” enough, your cloud bread will spread and be flat. The peaks are stiff when they “stand up” when you hold the beaters up (see my picture above). They also should not move or slide out if you tilt or invert the bowl.

What is cloud bread made of? ›

It's made using just a few simple ingredients—eggs, cream cheese, and cream of tartar—but when mixed up in just the right way and baked in a low heat oven, you get pillowy, bread-like rounds that are gluten-free and keto-friendly.

What is the trick to fluffy bread? ›

Add Sugar

Adding sugar weakens the gluten structure, absorbs water, and eventually makes the bread lighter and softer. As a result, sugar improves the bread's taste, structure and texture. Yeast also eats up sugar to produce carbon dioxide, which raises the dough and makes bread fluffy.

How do you make cloud dough better? ›

Start mixing the cloud dough with your hands once it's too hard to get it smooth with a spoon. Scrape the dough out onto a work surface and knead it with your hands to get it nice and pliable. Add a bit more cornstarch if the playdough is too soft. Add a bit more lotion or conditioner if it is too stiff.

Why is Aldi's bread so cheap? ›

By selling mostly its own brands, Aldi maintains strict control over production and supply chain costs. This unique business model and top-notch inventory management allow Aldi to pass significant savings (including on its bread) on to its customers.

Why is cloud bread good for you? ›

The pros. In addition to people looking to restrict carbs, the bread may be good for other dietary issues, says registered dietitian Rachel Dyckman. “Most cloud bread recipes are gluten-free, and can be made dairy-free by substituting non-dairy cream cheese or yogurt,” she says.

Why does cloud bread taste bad? ›

Sadly, the awful taste will bring you right back down to Earth. Sweet cloud bread is meringue. It's not like meringue, it is meringue, rebranded. Both recipes call for whipped egg whites with sugar, and sometimes a stabilizer, like an acid or a starch.

What do you do if your cloud bread is liquidy? ›

You just need a tiny bit of cornstarch in your cloud bread, to help soak up any extra liquid in your meringue. Cornstarch also helps make your meringue shiny.

What is Oopsie bread made of? ›

All the recipes I've tried and seen for Oopsie Rolls are all just slightly different from each other, but with the same three ingredients; eggs, cream cheese and cream of tartar.

Why is cloud bread trending? ›

The soft, colourful bread that'll make you feel like you are literally eating a cloud has taken over social media with people giving their own vibrant twist to the bread. Popularised by the TikTok user linqanaaa, the food trend not only looks good but also tastes great!

Can you eat cloud dough? ›

Simple Cloud Dough

It may sound simple but this form of cloud dough is a favourite! It looks just like sand, but it's edible! Lots of fun for little ones – you can even add sprinkles to make it colourful!

What's a substitute for cream of tartar? ›

The Best Substitute for Cream of Tartar

For every 1/2 teaspoon of cream of tartar in the recipe, use 1 teaspoon lemon juice or white vinegar. As an example, if your cookie recipe calls for 1 teaspoon baking soda, add 2 teaspoons lemon juice instead of the cream of tartar.

What makes bread not fluffy? ›

One of the most common reasons for dense bread is over or under-kneaded dough. Kneading your dough directly affects gas production, as it increases the rate that fermentation occurs. Without kneading, bread dough will take much longer to ferment fully.

Which makes the bread fluffy? ›

The yeast releases carbon dioxide, which fills the dough and increases its volume. Due to the heat, more gas bubbles emerge when this dough is baked. The bread rises and becomes soft and fluffy as the gas leaves.

Why didn't my bread puff up? ›

Yeast is too cold If the other ingredients are too cold, it could cause some of the yeast to die. Was the dough kneaded properly? Dough may not have been kneaded enough. Kneading 'exercises' the gluten in the bread and gives it the elasticity to hold in the air bubbles produced by the yeast.
