Sugar Free Cocoa Muffins

This is the cocoa muffin recipe that is a great idea for breakfast.

Having said that, you could really get away with eating this muffin at any time of the day if you wanted to.

This recipe reminds me of my recipe for 'Healthier Sugar Free Muffins'.

Both recipes are for a chocolate-like taste in a muffin. However, that recipe uses whole wheat flour as well as ingredient alternatives that this recipe does not offer.

This recipe is for anyone asking how do you make chocolate muffins from scratch.

Chocolate muffins, that is, that do not have sugar added to them.
This recipe calls for a sugar alternative instead.

To get that chocolate taste in this recipe we will use unsweetened cocoa powder.

Please make sure that you are using unsweetened cocoa powder and not a chocolate milk mix or similar product. Unsweetned cocoa powder is a sugar free and low carbohydrate ingredient.

You may be wondering how to make muffins moist.

In my opinion, moist muffins are important as nobody that I know seems to like a muffin that is dry. One way to make moist muffins is to use ingredients that provide or hold on to moisture.

Just as important for making moist muffins if the technique that you use to make your muffins.

Possibly the biggest texture technique related issues in muffins has to do with overmixing the muffin batter. Overmixing the batter can cause the gluten to react more than you would like it to and this can result in a dry muffin that is not so appealing to the taste buds.

Here are some tips for making Sugar Free Cocoa Muffins

I just mentioned that overmixing your sugar free cocoa muffin batter should be avoided as it can make the texture of your muffins unappealing. Also, I mentioned that you should make sure that you are using unsweetened cocoa powder and not a chocolate milk mix or similar product.

Here are some more muffin making tips for you.

  1. For best results, I tell my readers to always use fresh ingredients for the best results. This is especially true of leavening agents such as baking soda.
  2. Resist the urge to fill the muffin cups more than ¾ full. Doing so can cause your muffins to bake over the edges of the cups and onto the pan, a pain to clean up.
  3. Make your muffins more impressive by using an extra large muffin pan or extra small or mini muffin pan.
  4. Also, please be careful to not overmix your muffins as overmixing will cause the gluten to overreact making your muffins tough among other problems that can ruin your muffins.
  5. Make this recipe gluten free by using gluten free flour instead of regular flour. Or, you can make this recipe low carb by using low carb Carbalose flour. Make this 'keto friendly' by using a keto friendly flour. Please check the packaging to assure whether or not you will need a binder such as an additional egg.
  6. This recipe calls for using one egg. For vegan replacements, this is aboug a quarter cup of mashed bananas, a quarter cup of unsweetened applesauce or a a quarter cup of blended silken tofu. You can find all kinds of egg replacers here.

Have you ever wondered what is the difference between a muffin and a cupcake?

I will say that I have seen or tasted bakery made muffins that have ingredients added which makes the muffins appear to be more like a cupcake. However, cupcakes usually contain more sugar and fat in them to make them more desirable as a dessert rather than a breakfast idea.

Many muffin recipes use cooking oil instead of butter.
