How to Make Divinity Candy Recipe
Use parchment paper to line baking sheets.
Prepare a medium heavy saucepan and add a candy thermometer to the pan.
Add the sugar, corn syrup, and water to the pan and heat on medium until the ingredients meet a hardball stage. The temperature will reach 250-260 degrees F.
While your ingredients are cooking, begin to beat the egg whites to form stiff peaks.
Once the sugar is at the right temperature, take away from the heat and gradually add to your egg whites, on high speed, whip continuously.
Pour in the vanilla and beat again until the candy starts to hold its shape. You will do this for about 10-15 minutes.
Before use, spray the cookie scoop, then arrange scoops of dough onto the baking sheets.
Add your desired garnish right after, I used pecans.
You will need to let the candy dry and harder for several hours or overnight for the best results.
Then, store the rest of the candy in an airtight container for up to 2 weeks.
How do I Store Divinity Candy?
You will need to store the Divinity Candy correctly for it to last the longest. Store this candy a couple of different ways. You can store in an airtight container, Ziploc bag or wrap tightly in plastic wrap.
How Long Does it Take for Divinity to Harden?
It can take several hours for the Divinity candy to harden. You will want to give it enough time for the best results. I like to plan on giving it overnight to set and harden before enjoying it.

Divinity candy and nougat differ in their ingredients, preparation, and textures. Divinity is made from sugar, corn syrup or maple syrup, and egg whites, resulting in a light and fluffy texture. Nougat, on the other hand, is made from sugar, honey or glucose syrup, and egg whites, producing a chewy and dense texture.
Actually, divinity is a candy that has the texture of a marshmallow, although there are no marshmallows used in the recipe. It's also similar to fudge, but still so different. (Is that clear enough😉 ?) If you have never tried divinity, this is an easy recipe to give a try and a taste!
In a meringue, the sugar syrup is cooked to about 240°F or until the sugar forms a soft, malleable ball when a spoonful is dropped in cold water. For divinity, the sugar is taken a bit further to 250°F (or the firm ball stage) where it can hold more structure.
Divinity is a confection made from egg whites, corn syrup, and sugar. It's similar to nougat, fudge, or marshmallow. Tip: replace the sugar with brown sugar to create "sea foam." Other ingredients can be used to give the candy other tastes, like chopped dried fruit and chopped nuts.
Humidity equals wet, and wet equals candy that often won't set. Even in the cooler and less humid months, it can be a challenge to make old fashioned divinity - that being a divinity that is purely sugar, corn syrup, water, egg whites, chopped pecans, a little vanilla - and a goodly amount of elbow grease.
Corn Syrup – This is added to stop the sugar from crystalizing giving you a very smooth, chewy texture that's not grainy. Sugar – White granulated sugar is the best for this recipe, avoid brown sugar or it'll affect both the taste and look of the divinity.
Consider this: divinity hates humidity. It's best to make divinity on a cool, dry day. If it's humid (over 50%) or rainy, the candy might end up with a more gooey, or grainy texture.
Divinity candy can be stored in an airtight container at room temperature for up to 2 weeks. It can also be stored in the refrigerator for up to 1 month. If you are storing divinity candy in the refrigerator, let it come to room temperature before cutting it into squares.
How to Store Divinity Candy. Improper storing is one of our top five candy-making mistakes. To ensure it stays fresh, store your divinity candy in an airtight container in a cool, dry place for up to two weeks.
Typically known as "divinity," this fudge is unlike your average. This is because it's a fluffy white or artificially tinted fudge. Whereas traditional fudge is made from your usual baking ingredients (sugar, butter, milk and cream) -- divinity is created out of sugar, corn syrup, egg whites, and artificial flavoring.
The simplest, most common or classic type of meringue is the French meringue. It's made by beating egg whites until frothy or soft peaks form (they'll barely hold their shape), then adding the sugar gradually to make sure it dissolves, while continuing to whip the whites.
The only difference between making nougat and making Divinity, I saw, was that nougat requires that after blending beaten egg whites without about half of your hard-ball-stage syrup, you heat the rest to near hard-crack before blending it in. So the Divinity process is basically an easier version of the nougat process.
Gently stir in nuts. Drop mixture from buttered spoon onto waxed paper. Let stand at room temperature at least 12 hours, turning candies over once, until candies feel firm. Store in airtight container.
Unsourced material may be challenged and removed. Divinity is a nougat-like confection made with whipped egg white, corn syrup, and sugar. Optional ingredients such as flavors, chopped dried fruit and chopped nuts are frequently added.
Nougat is a confection made with sugar or honey that's cooked and then whipped with egg whites to aerate it. It often contains almonds or other nuts, candied fruits and chocolate, although it can be left plain. Nougat can be soft and tender like marshmallow but is more often dense and very chewy.
It has better UIs, performance, native controller support, Tactician/Honor Mode, a bunch of voiceovers and quests, gameplay features(Dual wielding/wands), etc. If you don't know which flavour to pick, Enhanced is always the one you want to pick.
