I agree-I love Costco's pesto. I don't discard the other egg yolks. I use them all, doubling the amount of filling, and have it with celery and sweet peppers.

Laura

Serve these to the kids on March 2nd with a side of ham to celebrate Dr. Seuss's birthday! Green Eggs and Ham!

Detlef

My devil likes chili to go with the egg yolks. Make a paste of avoccado, young garlic and groung chili, add some salt and pipe the mixture into the egg whites.

if you want to amp up the fun-food factor, try quail eggs. they're easy to find at oriental food stores. while a bit fussier to peel, the ooohs and aaahs from your guests makes the extra effort worthwhile. for presentation, i top each egg with a small caper (the kind in brine). mmmm. devilishly good.

Tony B

This one is a winner. I mixed half basil and mint for the pesto, making this just perfect to my taste.

Really good. Since pesto can differ by consistency, we ended up adding some mayo and a little lemon juice.

ekdny

I would do 1/4 cup pesto and 4 egg yolks, and make sure the pesto isn’t dry.

Dmaniac278

What is this discard-half-the-yolks nonsense? Make twice as much! Fill 'em twice as full!! Carpe diem!

RosebudTX

I had made some basil pesto the night before so used that, as suggested used s&p on the eggs whites before filling, and ate a few with thick slices of tomatoes I cut up to get both in same bite—so fresh and good!

Roberta

I sometimes make with an Indian curry twist.I topped these with Maldon sea salt and red pepper flakes to give them a little bit more texture and expand the flavor profile.I mixed half basil and mint for the pesto, making this just perfect to my taste.I don't discard the other egg yolks. I love deviled eggs, sometimes rather basic and other times with an Indian curry twist. But I really didn’t like this one. Egg yolk is already rich, and adding pesto was just too much.

Wynne

I topped these with Maldon sea salt and red pepper flakes to give them a little bit more texture and expand the flavor profile.

These are amazing. Make as directed or add a little more pesto. For people who don’t like developed eggs, these are a great alternative.

I boiled a dozen eggs and split them, half standard deviled eggs and half pesto. All of the eggs disappeared in a snap. I really liked the pesto version. Two guests who are not fans of deviled eggs really appreciated these. I used homemade basil pesto with pine-nuts that was in my freezer. It didn't turn brown, but I did mix the yolks in and stuff the eggs at the last minute.

Becky

My yolk/pesto mixture turned brown within 10 minutes of making them, which I wasn't expecting! As a result, they definitely did not look very appetizing and I didn't end up serving them. If anyone knows a way around whatever chemical reaction causes that, I might give them another try.

Tasty and quick recipe, big hit on 4th of July. I used Costco's terrific pesto - better than I can make
