We’re making today a little bit sweeter with these Valentine’s Sprinkle Sugar Cookies! Inspired by our Funfetti Cookies, we thought it would be fun to give them a bit of a Valentine’s make-over.

The cookie itself is SO easy to make – made in one bowl (which means, less dishes!). But, I think my favorite part is that these cookies require ZERO refrigeration time, like our Double Chocolate Madeleines or our Strawberry Chocolate Chip Cookies.

That’s right! Just mix up the cookie dough, scoop it, and bake it. No need to wait! It’s the ideal easy cookie recipe. So, whether you’re looking for a last minute Valentine’s Day treat or want something fun to make with family/friends, these cookies are the perfect treat.

A sprinkle cookie (or funfetti cookie!) is simply a soft and chewy sugar cookie with some sprinkles added into the dough! This version uses Valentine’s Day themed sprinkles to make it a bit more festive. It’s a fun and easy cookie for all ages!

Use a 1½ Tablespoon cookie scoop to portion dough onto prepared pans. Bake for 12-14 minutes, until light brown around the edges.

How To Get a Perfectly Round Cookie

The best way to achieve this is using a cookie scoop, as the dough balls will already be in close-to-perfect rounds. As they bake, the cookies will spread into a perfect round shape!

Sometimes though, the cookies can get a little wonky-shaped while spreading, but no worries! You can still fix it.

Using a biscuit cutter that’s larger than the cookie, bump the cookies while they’re still very hot to fit inside the cutter and circle around them to create the perfect round shape!

Ingredients

  • cup salted butter, room temperature
  • cup granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • cups all purpose flour*
  • ½ teaspoon baking soda
  • 3 Tablespoons Valentine's sprinkles

Instructions

  • Heat oven to 350℉.

  • Line sheet pans with parchment paper. Set aside.

  • With an electric mixer, beat butter and sugar until light and fluffy, about 2-3 minutes.

  • Beat in egg and vanilla.

  • Stir in flour and baking soda.

  • Mix in sprinkles.

  • Use a 1½ Tablespoon cookie scoop to portion dough onto prepared pans.

  • Bake for 12-14 minutes, until light brown around the edges.

  • Allow to cool on pans.

Notes + Tips!

*This recipe was written using an average of the dip and sweep method for measuring flour and the spoon and level method. If you are using a scale, you will need to add 3/4 oz or 22 g to the measurement for each cup of flour.

How To Store:

The best part about these cookies? They can be frozen for up to 3 months! Oh, yes, that’s right. After baking and cooling, you can place the baked cookies in an airtight freezer safe zip top bag and put in the freezer.

But, if you’d like fresh baked cookies instead, you can actually freeze the cookie dough itself! Follow the directions all the way to portioning out the dough. From there, place a few inches apart on a lined sheet pan and place in the freezer for 1-2 hours, or until the cookie dough is frozen solid. From there, place the frozen cookie dough balls in a zip top bag and keep in the freezer for 1-2 months.

You can also keep these cookies in an airtight container or zip top bag on the counter for about a week!

Tips For Success:

  • Make sure the butter and eggs are room temperature!
  • Be careful not to over-mix the cookie dough!
  • If baking multiple pans at a time, be sure to check on the cookies at about 8 minutes into the bake time.
  • Don’t forget to line your sheet pans.
  • It’s best to use a cookie scoop to ensure all cookies are the same size.
